Here’s an update on the space.
This is the beginning of the third month of the fixturing period. Half way. The trench has been filled and the holes in the wall have been covered. Still lots of rough edges. The walls need to be taped and filled, and there is plumbing and electrical to finish. Without a doubt, though, we are making good progress.
A few small pieces of equipment have made it into the space already; our planetary mixer and our starter mill, an 8” burr mill. Today two fridges are arriving.
Getting equipment into the space is a bit of a challenge. Everything comes through the alley, and has to get lowered in with a mechanical lift. It was good to start with the planetary mixer, as it is one of the smaller machines. Bless all equipment on casters that can fit through a 36” door.
The deck oven was supposed to be delivered on Friday. It arrived at the Port on-time, but hasn’t cleared customs yet. So, we’ll get fridges in first. Each piece of equipment in feels like a milestone. Hopefully these big pieces don’t cause too much trouble.
Successfully wrapping up construction and loading in the equipment is taking up so much of my attention these days. Once we’ve had inspections done on the build-out (electrical, plumbing), we will have our final inspection with Coastal Health. To keep with the schedule, we have eight weeks to get this all done. I’m optimistic, and hoping we could have the equipment up and running sometime in November.
